You know what makes our Tzatziki pie so good? It’s the same thing that makes every single iPIE that comes out of our oven so good! It’s the crust…it starts with the crust. And crust is something we’ve got down—we know how to make it. It’s crispy, it’s crunchy, it’s chewy, and it’s flavorful. Our crust has such great flavor…it’s unbelievable! Then when we put our olive oil on it…it’s fantastic! We use domestic olive oil from California and its high quality, extra virgin olive oil. If you study olive oil and you actually do tastings and you taste Corto versus others, you’ll taste a Tuscany grassy olive oil and that olive oil on top of our crust with some minced garlic sets that base of the foundation for deliciousness. Then we put on kalamata olives, crispy red onions, and fresh organic Boulder lamb. That lamb is grown by Clint Buckner in Boulder Colorado. I know the farmer, I’ve been to his ranch, I’ve seen the animals. It’s the way we finish this pie that makes it so good because it’s the fresh salad and the sauce that makes the Tzatziki. The last thing we do is throw on a little bit of feta cheese…and that is total deliciousness right there‑nothing better!
